After some research, he discovered the ketogenic diet. Though doubtful at first, he decided to give it a try.

Salem’s journey began with a simple email he sent after experiencing remarkable results:
“I didn’t have a problem with losing weight. The problem was that other diets I had tried before did not account for a long-term result, so I ended up always gaining back the weight I lost. I was depressed with the way I looked, had no interest or energy, my mood was erratic. I was angry with myself and towards my family. I was facing new psychological problems with phobias. I needed a solution, I wanted to turn to drugs.
I was glad and happy that I found the ketogenic diet and I was extremely doubtful and thought it was just another fad diet. I started and I was just amazed, not just the weight loss, but my mood, my emotions, my energy all came back. I was feeling as energetic and youthful as a teenager. Keto Fried Eggs with Kale and Pork
Instructions:
- Melt two-thirds of the butter in a large frying pan over medium-high heat. Add the kale and fry for a few minutes until lightly browned around the edges. Remove from the pan and set aside.
- Add the bacon to the pan and fry over medium-high heat for 7-10 minutes until crispy. Transfer to a paper towel-lined plate and remove the bacon fat from the pan (reserve or discard).
- Reduce the heat to medium-low. Return the kale to the pan and add the cranberries and nuts. Stir until warmed through, then reserve in a bowl.
- Melt the remaining butter in the pan over medium heat. Fry the eggs for a few minutes until the whites are set and the yolks thicken. Season with salt and pepper, and serve the eggs with the kale mixture.
Tip! Pre-washed baby kale can be used instead of kale. It cooks slightly faster and is a great shortcut. You can also use other greens like cabbage, chard, or spinach. Or, make it a side dish by eliminating the fried eggs.
Keto BBQ Ribs with Squash Salad
Instructions: BBQ sauce:
- Heat the oil in a heavy saucepan and stir in the tomato paste. Add the onion and fry over medium heat until soft and glossy.
- Add a couple of tablespoons of water and simmer for 10-15 minutes.
- Add the spices, tomatoes, and vinegar and season with salt and pepper to taste.
- Bring to a boil, then lower the heat and simmer for 15-20 more minutes. Blend the sauce with an immersion blender until smooth. Let cool. (For a thicker sauce, simmer longer.)
Ribs:
- Salt the ribs on both sides and place them in a slow cooker. Add half of the BBQ sauce to the slow cooker and cook the ribs on low heat for 6-8 hours. Keep the other half of the BBQ sauce in the refrigerator for serving.
- Take out the ribs and let them cool. (You can complete this step a day in advance if desired.)
- Finish the ribs on the grill or under the broiler to crisp the surface; this takes about 15 minutes. Make sure to flip the ribs after 7-8 minutes.
Salad:
- Peel and cut the squash into cubes. Salt them and place in a colander. After 5-10 minutes, press out excess water.
- Sauté the squash in butter for a couple of minutes over medium heat. Do not overcook. Set aside and let cool.
- Mix the other salad ingredients in a big bowl; fold in the squash.
Tips:
- No slow cooker? Try boiling the ribs in salted water. Remove the foam, let boil slowly for 1.5-2 hours, then marinate in BBQ sauce. Then, follow the grilling step.
- Prepare the salad 1-2 days beforehand for enhanced flavor.
